Why waste Dobbs’ fairly tasty pasta sauce on old pasta when you could have a fantastically fancy, hand-constructed pizza? Aside from fighting with Dobbs’ terrifying commercial microwave, it’s absurdly easy to make this pizza that rivals the taste of Rollins Late Night. In fact, that angrily beeping microwave actually does a fine job of softening the spinach and melting the feta perfectly without reducing the English muffin to a soggy mess. I mean, not to brag or anything, but my mini-pizzas were absolutely delicious — warm and melted, with a perfect blend of effectively cooked spinach and quality feta. Together, the mini-pizzas contained about 300 calories. For something this eye-catching and mouth-watering, that’s unbelievable. The looks of envy you’ll get as you walk back to your table alone will make it worth it. So try it — your taste buds will thank you.
Ingredients:
1 English muffin from the bread area
A handful of spinach from the salad bar
A handful of feta cheese from the salad bar
1 tablespoon of pasta sauce from the pasta bar
Directions:
Grab an English muffin, split it apart and dab on your desired amount of pasta sauce. Next, grab a handful (or tongful, preferably) of spinach from the salad bar and cover the pasta sauce with it. Add your desired amount of feta and pop it in the microwave for about 45 seconds on medium-high.
