Caprese salad is one of my favorite things to make because it is made exactly like all of my Eat of the Week dishes — you simply combine the ingredients to get brilliant flavor. No one really wants or has time for an appetizer, though, so I decided to make it into a sandwich. As I sat down to create it, I found myself internally thanking Campus Dining Services for providing spices and condiments. Basil is a necessary component of caprese salad that really brings the sandwich together. The end result was a quick, delicious and fancy sandwich that I will continue making in the future. Every flavor works together to create a truly scrumptious sandwich.
Ingredients:
2 slices of white bread, toasted
4-5 tomato slices
2-3 tablespoons of feta cheese
A very generous sprinkling of basil
2-3 teaspoons of olive oil
4-5 pieces of iceberg lettuce
Toast the bread before going to the condiments area. Then, evenly place the thickest tomatoes you can find on top of one piece. Sprinkle basil on top of the tomatoes and add feta cheese (instead of the mozzarella cheese in actual caprese salad). Microwave it on medium for about 30 to 45 seconds and drizzle a small amount of olive oil over it. Finally, add a few pieces of lettuce for a little crunch.
