We all know that breakfast is the most important meal of the day (at least that’s what we’re told), but most of us cannot find time to fit it in our schedule. MOVE has prepared three easy “recipes’’ for those who want to eat breakfast but don’t have a lot of time to spare.
**If you’re looking to snatch and go:**
_Yogurt, fruit cup and granola bar._
On your way out the door in the morning, make it a point to stop by the refrigerator and grab a yogurt. Yogurt is filled with nutrients such as calcium and a variety of vitamins that are essential in our daily diets. Pick up a cup of fresh fruit and a granola bar to snack on once you have finished your yogurt.
**If you want fancy but fast:**
_Last night’s casserole: 6 eggs, 1/2 cup of milk, 1 pound ground sausage, 1 package shredded cheddar cheese, sliced bread._
This dish would be great to prepare on a Sunday, and it can be breakfast throughout the week. Preheat oven to 400 degrees. In a frying pan, cook sausage, drain and let cool. In a large bowl, whisk 6 eggs and 1/2 cup of milk together as if you are preparing to make scrambled eggs, and set aside. Next, place bread flat in a baking pan. The number of slices you will need will vary depending on the size of your baking pan. Spread cooked sausage on top of bread, add shredded cheese over sausage, and pour uncooked eggs on top, making sure to distribute evenly. Cover with aluminum foil and let sit for a couple of hours. The longer it sits, the fluffier the casserole will be. Cook in the oven for 40-60 minutes. Once it has cooled, place in refrigerator. In the morning, cut a slice, microwave and go.
**If you’ve got time to spare:**
_Oatmeal and fruit._
In a microwave-safe bowl, cook oatmeal as instructed on the packet. When finished, top the oatmeal with brown sugar for sweetness, and add the fresh fruit of your choice. For those who eat bananas, slice one up to eat with your oatmeal. Bananas contain resistant starch, which is a healthy carbohydrate that keeps you full longer. This oatmeal recipe is easy to cook, delicious and can also help reduce your cholesterol.
