
**Materials:**
Plastic cups
Popsicle sticks
**Ingredients:**
_For lemon layer…_
1 1/3 cups plain yogurt
1/4 cup lemon juice
5 tablespoons sugar
_For strawberry layer…_
1 pint strawberries, cored and quartered
1/4 cup sugar
2 tablespoons water
1 teaspoon lemon juice
1 cup plain yogurt
**Directions:**
_For lemon layer…_
1) Heat the lemon juice in a small bowl for approximately 45 seconds. Dissolve the sugar into the warm juice.
2) Pour the mixture into a medium bowl and combine with the yogurt. Whisk until smooth and refrigerate until ready to assemble the popsicles.
_For the strawberry layer…_
1) Heat the strawberries, sugar and water in a medium saucepan, bringing to a boil and then simmering for five minutes.
2) Once the strawberries are soft, pour this mixture and the lemon juice into a bowl, and mash with a fork until at your desired consistency. Chill in the refrigerator until cool. Then mix in the yogurt.
_To make the popsicles…_
1) Use a spoon to carefully fill your plastic cups with alternating layers of the lemon and strawberry mixtures. Place your popsicle stick in the center of the filled cup and freeze overnight.
2) To remove the popsicle from the cup the next day, run the cup under water that’s warm enough to dislodge the pop and enjoy!
