If my freshman year has taught me anything, it’s that anything goes when it comes to food.
Just from freshman year alone, I’ve been introduced into the world of T-ravs and buffalo chicken dip, two things I’m not the biggest fan of. Despite my taste, everyone else loves them.
But now that it’s second semester, I’ve hit a roadblock with my taste buds and can’t stand dining hall food.
So MOVE has come up with a day’s worth of meals, from breakfast to dinner, for those who fear going outside in the cold and the dim lighting of the dining halls.
**BREAKFAST: French toast in a cup**
Ingredients:
-1 ½ slices of bread
-½ tablespoon of butter
-1 egg
-3 tablespoons of milk
-A sprinkle of cinnamon
-A single drop of vanilla extract (Only if you’re into your French toast being really sweet.)
-2 coffee mugs (bigger the better to pour the liquid in)
Directions:
1) Cut your bread into cubes.
2) Butter the inside of one of your mugs; microwaving and sloshing around the butter works best.
3) Place the bread in the mug and smoosh it down a bit. Don’t compact it — you just need the bread to absorb all of the liquid.
In a separate mug, add the rest of the ingredients and mix with a fork.
4) Pour the mixture into your mug with the bread, smoosh it a little and then let it soak into the bread for a minute.
Stick your mug in the microwave and start with one minute. Add ten seconds at a time until you have cooked it to your liking! Enjoy!
**LUNCH: Single-serve pizza**
Ingredients:
-1 English muffin
-Tomato sauce
-Mozzarella Cheese (or really any cheese)
Directions:
1) Cut your English muffin in half. I recommend toasting it in a toaster oven for a bit so it will come out less soggy from the microwave.
2) Put your preference of sauce and cheese on your English muffin. Add toppings like pepperoni or pineapple, if you want.
3) Put in the microwave for around 30 seconds or until the cheese is melted to your liking.
**DINNER: Mac and cheese in a cup**
Ingredients:
-1 cup of water
-¾ cup of uncooked macaroni noodles
-½ cup of your choice of shredded cheese
Directions:
1) Place macaroni in a mug and add water. The water should completely cover the pasta.
2) Microwave the pasta on high for 8 minutes. At the 5-minute and 2-minute mark, stir the pasta and add more water if needed.
3) Add your choice of cheese and microwave for around 30 seconds. If it doesn’t melt completely add 30 more seconds.
Stir and enjoy!
**DESSERT: Cookies and Cream mug cake**
Ingredients:
-¼ cup white chocolate chips
-3 tbsp whole milk
-4 tbsp all-purpose flour
-1/4 tsp baking powder
-1/2 tbsp vegetable oil
-2 Oreo cookies
Directions:
1) Place the white chocolate chips and milk in the mug and microwave for about 40 seconds or until chocolate is melted.
2) Add the flour, baking powder and oil and whisk until the batter is smooth.
3) With a fork, smash the Oreos into the batter until only small chunks remain.
4) Cook in the microwave for around 1 minute and then let the cake cool for a minute.
