I despise rainy days at Mizzou. I hate the way lecture halls smell because of everyone’s wet boots and umbrellas, so naturally I count down the minutes until I can get back to my safe haven (my apartment). On gloomy, rainy days, I like to come home and eat comfort food that makes me forget about how sad the weather is outside.
What is one of the easiest and most satisfying meals to make on a rainy day? None other than a classic grilled cheese sandwich. Grilled cheese sandwiches have been my go-to since I was a little girl. I remember my dad showing me how to make one because I would constantly ask him to make them for me for lunch in the summer. I would eat my grilled cheese with pickles and ketchup on the side (no judging) while watching whatever show was playing on Disney Channel. I even went through a phase in which I ate a grilled cheese sandwich for lunch every day, much to my health-food-oriented mother’s dismay.
There is nothing I love more than biting into a buttery grilled cheese that has cheese oozing from every side. There are so many different ways to enjoy a grilled cheese sandwich. Here are two recipes to try if you want to take your sandwich to the next level.
Pesto grilled cheese
2 slices of thick whole grain bread
Butter
1 tomato
2 tablespoons of pesto
2-3 slices of cheddar cheese
Directions: Butter one side of each slice of bread and evenly spread pesto on the opposite side of the bread. Slice the tomato into thin slices and layer on top of the cheese and then place on pesto side of the bread. Put sandwich in skillet on stove and cook until cheese is melted. Make sure to flip frequently to keep the the bread from becoming too crispy.
Cheesy avocado grilled cheese
2 slices of thick whole grain bread
Butter
Half of an avocado
1 teaspoon of onion powder
Directions: Butter one side of each slice of bread and evenly spread pesto on the opposite side of the bread. Slice the avocado into thin slices and layer on top of the cheese and then place on top of the bread. Sprinkle onion powder on top of cheese before closing sandwich. Put sandwich in skillet on stove and cook until cheese is melted. Make sure to flip frequently to keep the bread from becoming too crispy.
