If you only have a dorm room or a small kitchenette available to you this Thanksgiving break, these microwaveable and easy oven recipes will allow you to celebrate Thanksgiving without the stress and time that preparing a dinner usually takes.
####Turkey cutlets with pan gravy
(Serves four)
Ingredients:
1 tsp. poultry seasoning
¼ tsp. seasoned salt
¼ tsp. pepper
1 package (17.6 oz.) turkey breast cutlets
2 tbsp. canola oil
2 tbsp. butter
¼ cup all-purpose flour
2 cups chicken broth
Directions:
Mix poultry seasoning, seasoned salt and one-eighth tsp. pepper; sprinkle over turkey. In a large skillet, heat oil over medium-high heat. Add cutlets in batches; cook until no longer pink, two to three minutes per side. Remove from pan; keep warm.
In same pan, melt butter over medium heat; stir in flour until smooth. Gradually stir in broth. Bring to a boil; cook and stir until thickened, about two minutes. Sprinkle with remaining pepper. Serve with turkey.

####Sweet potato casserole
(Serves eight)
Ingredients:
1 can cut sweet potatoes, undrained
1 cup white sugar
2 eggs
⅓ cup butter
1 tsp. vanilla extract
1 cup packed brown sugar
1 cup chopped pecans
⅓ cup all-purpose flour
⅓ cup milk
⅓ cup butter, melted
Directions:
Preheat oven to 350 degrees. Butter a two-quart baking dish.
Place the sweet potatoes and their liquid in a medium saucepan and bring to a broil. Cook 15 minutes, or until tender. Remove from heat, drain and smash.
In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, one-third cup butter, milk and vanilla extract. Spread evenly into the baking dish.
In a separate bowl, mix the brown sugar, chopped pecans, flour and one-third cup melted butter. Sprinkle over sweet potato mixture.
Bake for 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.

####Microwave macaroni and cheese
(Serves one)
Ingredients:
⅓ cup pasta
¾ cup cold water
4 tbsp. milk
¼ tsp. cornstarch
4 tbsp. grated cheddar cheese
Salt and pepper
Directions:
Add the macaroni and the water in a large microwavable mug.
Microwave for three and a half minutes, or until the pasta is fully cooked.
Pour off the remaining cooking water.
Stir in the milk, cornstarch and shredded cheese and microwave for 60 seconds. Stir well and season with salt and pepper.

####Microwave pumpkin chocolate chip cookie mug cake
(Serves one)
Ingredients:
4 tbsp. all-purpose flour
1 ½ tbsp. granulated sugar
2 tbsp. canned pumpkin puree
1 tbsp. melted butter
⅛ tsp. + 1/16 tsp. ground cinnamon
2 tbsp. semisweet chocolate chips
Directions:
Combine all ingredients except chocolate chips into an oversized mug and mix until the batter is smooth. Stir in one tbsp. of the chocolate chips.
Line a round plate with parchment paper. Put the cookie batter on the plate and shape it like a round disc. Add the remaining chocolate chips on the surface.
Cook in the microwave for 50 seconds and let the cookie cool before eating.
