Pita bread and hummus are a classic — one is rarely seen without the other. Pita is often paired with feta, which usually goes with spinach, which usually has tomatoes. I decided to put all the typical pita-related items together into one typical pita sandwich. All of these items are paired with each other for a reason — they blend amazingly well into a tasty, light dish.
Ingredients:
1 piece of pita
1/3 cup spinach
1/4 cup lettuce
4-5 grape tomatoes
2-3 tablespoons of hummus
1-2 tablespoons of sliced mushrooms
3-4 teaspoons of feta cheese
Directions:
Grab a pita and add a slathering of hummus to one side. Add the lettuce and spinach to the other side, and then add the rest of the ingredients on top of the greens. Fold in half and enjoy.
