I found myself in the mood for a tasty appetizer-like dish, but I still wanted more hummus. So I decided to expand on the hummus platter and change the pita to cucumbers, as well as adding some mushrooms and cheese on top for a slightly more solid dish. It came out as an incredible mix of flavors for a completely fulfilling dish.
Ingredients:
10-12 slices of cucumber
3-4 tablespoons of hummus
3-4 tablespoons of mushrooms
2-3 tablespoons of feta cheese
Directions:
Collect all of the ingredients on one plate. Spread a little hummus on each of the cucumber slices and then add the mushrooms and feta on top of that. If you are willing to put in a little more effort, microwave the mushrooms with the feta on top just enough to melt the cheese before you add it to the cucumber. Melted cheese or not, these chips are delicious.
